Balanced and refined, the 1997 vintage reflects the pure expression of our terroir located in the heart of Grande Champagne. It reveals a character shaped by the contrasting climatic conditions of that year. After a rapid and early owering, the cool and rainy months of June and July preceded a sunnier August, favoring a balanced ripening of the grapes. The harvest, both abundant and of beautiful quality, produced eaux-de-vie combining freshness and complexity. Distilled on lees then aged mainly in a humid cellar, this vintage reveals aromatic richness, finesse and length on the palate.
COLOUR
The 1997 vintage - 27 years old has a beautiful color, an intense and sparkling orange-yellow.
NOSE
From the first nose, it seduces with its finesse and balance, while revealing a delicate intensity. The oral aromas of linden blossom blend perfectly with the fruity notes of orange and peach compote. Upon aeration, the bouquet is enriched with more gourmet nuances, with hints of vanilla and accents of apple.
PALATE
The attack on the palate surprises with a real freshness, remarkable for a cognac that has undergone a long ageing process. The whole reveals itself to be both balanced and delicious. We find the notes of orange already perceived on the nose, enhanced by a subtle hint of spice. The finish is elegantly expressed with flavors of nutmeg and licorice, offering a beautiful length on the palate.
